Le gluten contenu dans la farine de bl\u00e9 est reconnu comme un champion de l\u2019inflammation. Et malheureusement, les boulangers ajoutent souvent du gluten \u00e0 celui pr\u00e9sent naturellement dans la farine pour augmenter le volume des pains. De plus, peu d\u2019entre eux utilisent encore des levains naturels.<\/h6><p>Avant d\u2019opter pour un r\u00e9gime strict sans gluten, tu peux essayer de fabriquer ton levain et ton pain toi-m\u00eame !<\/p><p>Tu pourras adapter ton pain \u00e0 tes besoins, en choisissant, variant et mixant tes\u00a0<a href=\"https:\/\/www.healthyfoodcreation.fr\/les-farines-et-leurs-utilisations\/\" target=\"_blank\" rel=\"noopener\">farines, avec ou sans gluten<\/a>\u00a0: bl\u00e9, seigle, sarrazin, ma\u00efs, riz, ch\u00e2taigne, etc.<\/p><p><strong>Le pain au levain naturel a plus de go\u00fbt, se conserve mieux, est plus riche en vitamines et min\u00e9raux et se dig\u00e8re mieux.<\/strong><\/p><p>Certes, faire son pain au levain naturel est un challenge au d\u00e9part mais c\u2019est aussi un instant \u201chors du temps\u201d, un retour \u00e0 l\u2019essentiel, un ancrage dans l\u2019instant pr\u00e9sent et l\u2019occasion de lib\u00e9rer ta cr\u00e9ativit\u00e9 pour d\u00e9corer ton pain chaque fois diff\u00e9remment.<\/p><p><strong>Voici la recette de base en 5 \u00e9tapes<\/strong> qui peut para\u00eetre fastidieuse car, m\u00eame si les \u00e9tapes sont simples et rapides, elles s&rsquo;\u00e9tendent sur plusieurs heures\/jours. Pour autant, il y a 1000 fa\u00e7on de faire son pain pour l\u2019adapter \u00e0 son mode de vie ! Chacun peut s\u2019approprier la recette pour ajuster le processus en fonction de ses besoins et de son temps.<\/p><p><strong>A noter,<\/strong> plus la farine est blanche, plus le pain va gonfler. Plus elle est compl\u00e8te, moins le pain l\u00e8vera\u2026 mais il n\u2019en restera pas moins d\u00e9licieux !<\/p><h3>Etape 1 &#8211; Faire ton levain naturel<\/h3><p>Rien de plus simple ! Il suffit de 4 ingr\u00e9dients et d&rsquo;1 minute par jour pendant 4 jours.<\/p><p><strong>Jour 1<\/strong><\/p><ul><li><p>20 g (2 c\u00e0s) de farine de seigle<\/p><\/li><li><p>5 g (1\/2 c\u00e0c) de miel<\/p><\/li><li><p>20 g (2 c\u00e0s) d\u2019eau<\/p><\/li><li><p>Puis repos \u00e0 temp\u00e9rature ambiante sous un linge propre pendant 24h<\/p><\/li><\/ul><p><strong>Jour 2<\/strong><\/p><ul><li><p>40 g (4 c\u00e0s) de farine de seigle<\/p><\/li><li><p>5 g (1\/2 c\u00e0c) de miel<\/p><\/li><li><p>40 g (4 c\u00e0s) d\u2019eau<\/p><\/li><li><p><span style=\"font-size: 13.68px;\">Puis repos \u00e0 temp\u00e9rature ambiante sous un linge propre pendant 24h<\/span><\/p><\/li><\/ul><p><strong>Jour 3<\/strong><\/p><ul><li><p>80 g (8 c\u00e0s) de farine de seigle<\/p><\/li><li><p>80 g (8 c\u00e0s) d\u2019eau<\/p><\/li><li><p><span style=\"font-size: 13.68px;\">Puis repos \u00e0 temp\u00e9rature ambiante sous un linge propre pendant 24h<\/span><\/p><\/li><\/ul><p><strong>Jour 4<\/strong><\/p><ul><li><p>100 g (10 c\u00e0s) de farine de bl\u00e9 T65<\/p><\/li><li><p>100 g (10 c\u00e0s) d\u2019eau<\/p><\/li><li><p>Puis conserve ton levain naturel soit \u00e0 temp\u00e9rature ambiante, soit au frigo, avec un couvercle mais non viss\u00e9 car le levain lib\u00e8re du gaz carbonique qui doit pouvoir s&rsquo;\u00e9chapper<\/p><\/li><\/ul><h3>Etape 2 &#8211; Maintenir et rafra\u00eechir ton levain<\/h3><p>Ton levain naturel est un \u00e9cosyst\u00e8me vivant, pour le maintenir, tu dois lui donner \u00e0 boire &#8211; de l\u2019eau, et \u00e0 manger &#8211; de la farine, tous les 3 jours maximum. C\u2019est un peu comme un animal de compagnie\u2026 peu exigeant \ud83d\ude09 Il peut se conserver \u00e0 vie et facilement se refaire si tu pars 3 semaines en vacances.<\/p><p>La veille de l\u2019utilisation ou 4h avant, tu dois rafra\u00eechir ton levain en ajoutant de la farine et de l\u2019eau. Pour 200 g de levain, ajoute 200 g de farine de bl\u00e9 T65 + 200 g d\u2019eau.<\/p><h3>Etape 3 &#8211; Pr\u00e9parer ta p\u00e2te \u00e0 pain<\/h3><p>Pour 1 pain de 1 kg qui se conserve une semaine sans s\u00e9cher :<\/p><ul><li><p>Peser 200 g de levain naturel rafra\u00eechi<\/p><\/li><li><p>Ajouter 1 kg de farine(s) &#8211; tu peux tester plusieurs farines ou les mixer<\/p><\/li><li><p>Puis 600 g d\u2019eau ti\u00e8de \u00e0 chaude<\/p><\/li><li><p>Ajouter 3 g de sel (attention \u00e0 ne pas mettre le sel en contact direct avec le levain naturel)<\/p><\/li><li><p>M\u00e9langer \u00e0 la spatule\/cuill\u00e8re en bois ou \u00e0 la main<\/p><\/li><li><p>Couvrir et laisser reposer 15 min<\/p><\/li><li><p><span style=\"font-size: 13.68px;\">Etirer la p\u00e2te par les c\u00f4t\u00e9s et la rabattre sur la p\u00e2te (c\u2019est la technique du \u201c<\/span><a style=\"font-size: 13.68px; background-color: #ffffff;\" href=\"https:\/\/www.youtube.com\/results?search_query=stretch+and+fold+technique\">stretch and fold<\/a><span style=\"font-size: 13.68px;\">\u201d) &#8211; \u00e0 faire environ 3 fois toutes les 30 minutes<\/span><\/p><\/li><li><p>Repos pendant 6h \u00e0 temp\u00e9rature ambiante<\/p><\/li><\/ul><h3>Etape 4 &#8211; Fa\u00e7onner ton p\u00e2ton<\/h3><ul><li><p>Sur un plan de travail bien farin\u00e9, former une boule avec la p\u00e2te lev\u00e9e et cr\u00e9er de la tension en \u00e9tirant le dessus de la boule de pain. Pour cela, il faut mettre les mains en coupelle de chaque c\u00f4t\u00e9 du p\u00e2ton et rabattre la p\u00e2te sous le p\u00e2ton, en faisant 1\/4 de tour \u00e0 chaque fois<\/p><\/li><li><p>10 minutes de repos<\/p><\/li><li><p>Plier la p\u00e2te en enveloppe en rabattant les 4 c\u00f4t\u00e9s pour former un carr\u00e9, puis recr\u00e9er de la tension.<\/p><\/li><li><p>Mettre un papier essuie-tout ou un torchon bien farin\u00e9 dans le fond d\u2019un bol et y d\u00e9poser le p\u00e2ton \u00e0 l\u2019envers en scellant bien le fond<\/p><\/li><li><p>Laisser reposer au frigo pendant 6h minimum et 48h maximum<\/p><\/li><\/ul><h3>Etape 5 &#8211; Cuire ton pain<\/h3><ul><li><p>Retourner le p\u00e2ton dans un moule (beurr\u00e9 et farin\u00e9) ou sur une plaque avec un papier cuisson<\/p><\/li><li><p>Entailler le pain ou laisser parler sa cr\u00e9ativit\u00e9 en r\u00e9alisant des dessins avec un couteau, un cutter ou une lame de rasoir<\/p><\/li><li><p>Enfourner \u00e0 235\u00b0 pendant 30 min.<\/p><\/li><\/ul><p>Pr\u00eate \u00e0 tenter l\u2019aventure ?
